The grapes
Corvina gentile, Corvina grossa, Rondinella and Oseleta.
The winemaking
After the grapes have been pressed, the wine stays in containers which allow the tertiary aromatic complexation and the strengthening of the body.
This process lasts approximately seven months, after which we proceed to a fundamental step for the improvement of the final harmony in tasting: the rest of the wine in 50 liter glass demijohns, hermetically sealed, for a very long period of seven years .
Finally, before going on the market, the wine is bottled and it stays there for about a year, to refine the overall balance and elegance.
The wine
An intense ruby red color with reflections of pomegranate. Hints of red fruit jam, cherries preserved in alcohol, Marasca cherries and dried fruit, along with sweet spicy notes such as tobacco, coffee, cocoa, liquorice and nutmeg. A velvety, full-bodied, elegant and smooth yet dry taste.
Food pairing
Strong and mature cheeses; succulent cured meats; pot roasts, game or grilled meats; dark (but not too bitter) chocolate
